Oatmeal Cake



1 3/4 cup boiling water
1 cup uncooked oatmeal
(let sit in bowl for ten minutes)

1 3/4 cup flour
1 T. cocoa
1 tsp. baking soda
1/4 tsp. salt
(sift together)

1 cup brown sugar
1 cup white sugar
1 stick margarine or butter
3 eggs
(add to oatmeal/water after ten minutes)

Stir the oatmeal and sugar mixture together well
Add the dry ingredients

we add chopped walnuts or pecans
sweetened coconut
chocolate chips

You can sprinkle it all on the top, or mix it into the batter
either way is good

pour into birthday cake size pan
bake for 25? minutes
350 degrees
